Double elim brackets

Can we do normal double elim brackets? For example in G pente tourney I should be in finals and thhe other 2 players with 1 loss should be playing in lower bracket.
2nd question, i forgot, if i do face 2yax in the finals and i have 0 losses and he has the 1 loss to me, does he have to win 2 sets or just 1?
